All I can say is "Wow!" Went with CitySlicker for a Hinds hunt with 7Mag at Lone Star Trail Outfitters this weekend and had a great time and enjoyed great hunting. Friday's sit allowed us to see muy whitetails and some great axis, but no Hinds. Fine, lot of weekend left. Saturday's sit in a different stand was nothing short of an Exotic Wildlife show. MAJOR chocolate fallow buck, white fallows, axis, more BIG whitetails, but still no Hinds. Roy said "That's it...we're going safari style." Lemme tell you...that country is something to enjoy. West Texas beaty, big elevation changes, and boo-coo wildlife to see. Turns out, those Hinds are tough to hunt. Drove the 5000 acres pretty much end-to-end and the only red deer we saw was a Red Stag standing silhouetted on the side of a mountain like some kind of majestic statue. Lunch, then back at it. We finally find them in a lower part of the ranch, and we didn't have long. They're about to blow out on us. Thanks to S&J Tactical and SWFA for the equipment that allowed me to confidently make the shot on one of them. I had taken my .270, but on Roy's advice, I took the AR10 in order to have a larger caliber. As I hunkered down so Mike could get into position on the second one, it started running up a mountainside. Both Roy and I just KNEW Mike was going for the running shot, but No...he waited patiently until it topped out on the ridge, and with his Sako 300 WSM (at twice the distance my shot was), knocked his Hinds right off her feet. Roy was right about taking at least .30 cal after these things...until I walked up on mine, I had no real perspective on just how big these animals are. It definitely takes 3 macho hombres to get one (field dressed) up on a tailgate. The lodge at LSTO is perfect. No, it's not a gazillion $$ pine-log five-star lodge with 3000 thread-count sheets and 60" TV's in each room. It's a VERY nice home with comfy beds and all the comforts you would want. Super clean, warm and well-kept with plenty of room for I would say at least 10...maybe more. Thanks, Roy, for having us and for putting us on some hard-to-hunt animals. Thanks, Mike, for sharing this hunt with me. I'll return to LSTO soon, and will hunt with you guys any time!

That is some of the best wild game meat too. Red deer goulasch is a favorite of mine; get yourself a few potatoes and dumplings and you're set.

I'm looking forward to some cooking. Chili, Stew, meatloaf, chiken-fry, stuffed jalapeno with ground meat/habanero/cheese, stuffed red bell peppers, burgers, medium-rare backstrap steaks rolled in sea salt/course black pepper/hand-crushed garlic, fajitas, tacos, quesadillas with spicy ground meat, homemade empanadas with meat & peppers, homemade chimichangas, bacon-wrapped medallions of tenderloin with garlic mashed red potatoes, pho with onion/lemongrass/and garlic-chili paste, the list goes on...
Crud, now I'm hungry.

Just had some red stag spike backstrap the other night. My simple approach:
Backstrap manually tenderized (a lot... with one of those spring loaded multi-blade tenderizers I've learned to love) to about 1 1/2 in. thickness. Coated with olive oil and hand rubbed with garlic, Montreal steak seasoning and South African Smoke (comes in a grind-top bottle from Trader Joe's). Slap 'em on the grill for 3 minutes per side for perfect medium rare. Melts in your mouth... Serve with a nice red wine and guests will be dazzled.

I had a great time taking these two THF fellars out. Impressed with their shooting skills. It wasn't an easy hunt but we got it done. Glad y'all liked it out here. Look forward to seeing y'all again.
