I was trying to 'barter' trading feral hogs for tamales, and I keep getting asked if they taste the same.

Now...hogs are hogs, imo.. heh... but hey, I could be wrong as I never made tamales before.

Anyone know how to prepare a feral hog that is shot so someone can make tamales out of it?

I am told all they do is steam the hog meat so I am assuming quartering the hog would be enough.

Skin the head, then boil it till all the meat falls off...in a distant location. Or, if you're not married, bake it.

They taste different from domestic pig.

Heh, I heard they use the head and then I am told people use pork butts as well. I am fine with either, but if I use the head, I think I want to make sure I know what the hell I am doing better wink till then, I'll stick with the rest of the body wink

BUT.. I really would have a blast making my own tamales, I just want to learn how to do them right first.

To start, I think I will try to bribe some nice people into taking lots of pork in trade for tamales.. and if I am lucky, they will let me sit down and make them too wink

I've been really successful in finding exactly that. Me personally, I don't need 15 dozen tamales, so if I can get 2-3 dozen in exchange for 2 feral hogs, I'm all over it. Find a barbacoa shop, go talk to those ladies behind the counter.

Well, tamales in general are a "need", no?

I am just saying that if I supply someone with 200lbs of pork they do not have to buy, that I want to get a fair amount of tamales for the other hog I supply. I am also willing to supply help making all the tamales.

I think that is totally fair and, frankly, don't think I could even store 15 dozen tamales.

my issue is not getting a ton for me.. I just enjoy sharing the sausages and tamales etc so.. I tend to over stock so I do not give more away and not get a few myself.

But.. thanks for replying and clarifying.... I guess..

Pork shoulder or butt either one make good tamales. We have given our tamale lady a butt before and she made some damn good tamales. She's hinted for another one for a couple of months now. Oh and one other thing, our dozens she now sells to us have 14 in them.

For many years my father had a deer lease in Benevides, TX. The old Exxon station was the post office and dominoes playing hang out. They sold the best tamales anywhere. We would trade javalina for tamales. If a javelina works, I would imagine a feral pig would do just fine?

My wife prefers for me to save her 1 a year for tamales. I just take the quarters and she bakes them low and low in a turkey bag. Makes great tamales.

I just got done making a batch from a ham and a butt. Still tons of meat left over.

I use Alton Brown's tamale recipe, I just prefer to smoke my hog meat instead of boil it like his recipe requires. After I smoke it, I pull it and throw it in a pot with the spices as called for in the recipe, but don't boil it, just let it simmer to get the spices transferred to the meat.

And yes, use lard, not shortening for the masa.

Traditionally tamales are made from the fattiest parts of the pig, Head and butt. When skinning the hog try to leave as much fat as possible. We have a 15 gallon caldron filled 1/4 of the way with water. Put the pieces that you want in it and cover it. Boil the meat down and remove the bones. Take the meat out and run it through the grinder and add seasoning. There's your filling.

The hard part is putting masa on the husk.

I tried to learn from an old mexican lady. She did 10 for every 1 I did and hers looked amazing and mine were irregular and too much masa. She would stop look and laught a little then crank out another dozen or so.
