We had 100# of venison and 125# of pork.






Made the seasoning using salt, pepper, cure, cayenne pepper and liquified garlic.





Mix the venison with the pork evenly.

Venison only



Venison with the pork on top



Mix the meat together, trying to keep an even split.



Spread the meat out on the table to add the seasoning.



Add half of the seasoning.



Then pour the liquified garlic on.

Mix the meat to spread the seasoning.



Then add the other half of the seasoning and mix it again.







Time to grind.

Add the meat and put the casings on the spout.










Use an overhand knot to tie the ends of the links

Soaked some mesquite for flavor.













Smoke at 150 for two hours, this is one hour into the smoke.

No better sausage stuffer than an old Enterprise. I have had mine for about 30 years, and the guy I got it from said he bought it in the 1940's and it was used when he bought it. They don't make stuffers like that anymore. up

Good info here. I make about 100# a year. The next batch I do I will try the liquified garlic. Fresh garlic is always better than powder.

If you're making 100# I'd start with a cup, that coffee cup is around 1 & 3/4 cups.
