I use Last Step Deer Processing in Humble. It is a small family owned business on Houston street, between FM 1960 and Townsend. Reasonable prices, quick turnaround, and Joe, the owner, guarantees that you will receive YOUR deer back. He makes a killer ground meat (hamburger) he calls Pawpaw's Mix. It is already seasoned with onions, bell peppers, some jalapeno, etc., and is great in chili!! We have also used it for meatloaf and spaghetti.

Alright I know this is favorite processor and all but I just wanted to share my experience that I had at a processor in Lindsay,TX..

Wild Country Game Processing: F

Okay here is what happened when I got my deer processed.A little more explanation for my aggression. I am not naming any names since my experience with the people that work there were not rude by any means..just shorted me on meat. I have worked very hard to prepare for hunting season, and to have what I have put alot of time and money into taken sucks pretty bad.

Alright so here is the deal.. I went to Wild Country deer Processing in Lindsay last week when I tagged a deer.I have never been to a processor before so when I walked in I let them know that.. I asked for a basic processing then next time I would get some of the extra stuff. It was said that it would take about a week and I would hear back from them.. Well I never heard from them so I called and was told well we have not finished your order because you didnt say whether you wanted
chili meat or burger meat..(hmm a phone call would have helped).. I didnt even know that was an option and I said I guess chili.. That was on saturday morning.. He told me to call them on sunday and it would be ready.. I call Sunday and it wasnt done, told me to come by sunday evening, I did..and half of it was done but not the chili..the other half was done earlier in the week..

So I paid in full and he said swing by Tuesday and your 21lbs of chili will be ready..sounds good.. I took my half of a box of meat home and then weighed it.
came to a grand total of 16lbs.. that is with 5lbs of summer sausage that i did end up ordering.(couldnt pass that up).

now a quick step back..on a basic processing you get Backstrap, Tenderloins, Roasts, Steaks, and Ground meat. Summer sausage comes from the roast.So I was told some would be used for the sausage with pork added.

Now .... I after I weighed my half a box of meat, I noticed that I only had 1 tenderloin.. 4 packets of backstrap that was butterflied and 8 packets of cutlets..this might get confusing so try and follow me....

If I were to say that I opened the packets of backstrap and put them together it would be equal to 8" of backstrap...WHOA... wait a freakin minute..thats if I say that each piece of backstrap is 2"(both sides of butterfly cut).(4x2"=8").I have skinned MANY deer and backstrap, I came home with 36" or more. Even baby deer would have more than 8".. Most backstrap's are between 12-14" on a small deer and there is 2 backstraps.. where the hell is the rest of my backstrap..GONE..

Okay now too the Tenderloin.. deer have 2 of them I got one.. I called and asked about it and was told, well it happens sometimes the butcher gets crazy with the knife and throws it in the chili.. okay I can live with that.. I have 21lbs of chili coming..we will see...

Okay I have no Idea where my roasts are ..cant even make jerky or a good stew.. they are just missing, or maybe just mixed in with the 21lbs of chili meat I have coming.. bottom line is I should have a couple roasts and I dont..I would be good with 1 since I got summer sausage..oh well just missing..

Now for the chili meat.. I picked it up on tuesday.. got home looked good.. weighed it and came to a total of 16lbs and some change.. lets call it 17lbs...NOT 21LBS.. where the HELL is my meat..Out of a 97lb deer I get 33lbs of meat half of it chili.

I had one of the CO-Owners contact me after he read my post yesterday and said you need to weigh it .. every package is weighed at 1.25 ... I had 5 bags under 15ounces... doesnt add up, there were only 3 or 4 bags at 1.25

So needless to say lesson learned.. I should have listened to a few of my friends who told to go somewhere else.. I will be going somewhere else for my processing in the future and will never recommend anyone to use their services.

This is my experience and my review of Wild Country Processing. You make your own decision. Sorry for the rant, but if you made to the end of this than good for you.

Used to take all my deer to Fischers in Muenster Tx but now Ive switched to wild country in Lindsay Tx they do awesome and timely work

Clays in Dublin has never done me wrong. $75 for a basic cut plus cost for sausage,etc and 24 hour dropoff. They just take around 10 days to get your meat done.

Santa Anna Wildgame in Santa Anna, or Hutchins Custom Processing in Cross Plains. Both places operated by the same family and have over 50 yrs experience. Both places process the animal that YOU bring in. No batch mixing so your deer doesn't go into the bulk pile with someone else's gut shot animal.... I have taken over 60 deer to these places between the two over the years and never had a single complaint.

DON'T GO to Joanis Family Processing in Kempner Tx. I have personally seen him take stuff out of peoples bags to give as samples saying"they'll never miss it". His shop is also dirty, tools rusty, and overall just an unclean place to do business. If you go there and your burger tastes like rust or your bag is missing meat don't say I didn't warn you!!

I commonly use two in the panhandle, both of which have been A+. Wild West Processing in Matador and Clint & Sons in White Deer. Just depends where I'm hunting as to which one I go to.
