By far one of the best sausage places is Slovacek in Snook, TX. The new one we came across this past year down in deep South Texas is Trey Mitchell processing. He does a bang up job with ground and his packaging is great as well. He uses real Kobe beef fat in his ground. One of the only places that does that!

I used Brent Stephens in Abilene and it was ok. I have used Halls in Coleman they do a good job but the best around the Abilene is Delk by a very fat margin. Nobody else in that area is even close. I have used the deer stop in Abilene and years ago Archas. Archas is not good and not good for you. Deer Stop is as good s Stephens. But hands down Delk is the nest hands down.
When all is said and done, there's nothing left to say or do!

I live in Georgetown but hunt around the Burnet, Llano, Lampassas area. I have used a variety of processor's over in that area. I use Brizendine's in Bertram most frequently and have had very good luck there with very reasonable prices. He is located next door to the post office. (512) 355-2897 (25-30 minutes east on hwy 29 from IH35).
My brother in law & his bro in law have recently started using a place in Watson (~5 miles west of Briggs on the south side of US183 almost across from the exotic game auction) that they have been very pleased with the processing, service, price and flavors. can't recall the name but will find out and post name & contact info. (~40 minutes from hwy 29 & IH35)
I have also heard of a fairly new place (opened last season) that does good work (from what I have heard) that is located on US183 north of Seward Junction, north of the north Gabriel a couple of miles, on the east side of 183 ... (~20-25 minutes from hwy 29 & IH35).

I ended up taking my recent one to Jack's on 400 Miller Rd in Georgetown. But I may try out Brizendine's for the next. Much obliged for the recommendations.

Ye Olde Butcher Shop in Plano, TX. They don't do jerky but everything else they do is outstanding. Best Jalapeno Jack Summer Sausage I've ever had. They are also very big about bagging and tagging your meat and making sure you get your meat and only your meat back. I take great care in dressing and preserving my harvests before having them processed so this is big for me. I've been to other shops (never more than once) that just tied a tag on quarter and threw it in with everyone elses' meat. Everyone here has been driving home from the lease and pass some guy on the road with hoofs sticking up out of the bed. I don't want that guy's sh!tty meat mixed up with mine.

I have known Darrell & Becky Brizendine since back in the 60/70s during our school days. They are good people and do good work, home town Bertram families. Very reasonable prices and I usually get a couple deer (minus backstraps) also turned into their medium hot dried sausage that is great deer lease/stand eats, heck I carry it year around when out & about.
I will likely give the place in Watson a try with one of my deer this year since I have heard such good things from my bro-in-law & his bro-in-law and it's only about 7 miles from my lease.
I used to really like Griffin's in Burnet (west side of town, south side of hwy 29 at top of hill) but their prices seemed to rise beyond my limits about 6-7 years ago, that's when I found Brizendine's and started using them.

Any good ones in Corsicana area? But also Don't mind traveling an hour or more for somebody good.I used J and S in Fairfield for years but somebody new took it over and I wasn't too impressed with the deer I took them last year. I do mainley sausages, chili and ground meat if anybody has suggestions other than heading north to Syracuse or Kuby's?
