Hey guys Sergeant Gillam and I went out hunting last week so with out further delay here are some pictures and a story below. Before After I was in a ground blind with feeder slightly up hill on western side, time about 17:45-18:00 sun had already came down past top of the hill. I was ready to wrap things up for the night. Then I have noticed shadow of an single animal running towards feeder. It was odd as pigs this size travel in numbers, but I wasn't picky. I gave some time to porker so she can settle down. With just enough light in my scope I put cross hair in a kill zone. Soon after her faith was set to land in my cooler. Pictured are just few items I made, BTW what you see in drying rack will smoking tonight. We all know porkers can give a lot of headaches to farmers and land owners, not to me it's sure was nice eater.

Wow! Not only am I hungry now, I'm envious! I look forward to learning how to process my own game meat, especially a pig roast (??) as depicted in your first picture. Smoked sausages look amazing. I'm sure everything tastes much better knowing you've taken from the land to provide for your family. Good hunting!

Very nice! What's the bacon wrapped item? Is it the backstrap or tenderloin? I'd love to hear how you cooked this! Thanks!

Chad It's back strap with mushrooms and spices in the middle then wrapped in smoked bacon and tied just like a roast and some spices outside. Real easy to make. One grease comes out you ca make souce out of it. Here is smoked piggie over cherry wood.
