Started out as an evening hunt in the stand. Ended up being a siesta til 9pm.

My wife makes tortilla soup with them that is out of this world. I usually make a stew in a crock-pot or Dutch oven, but I made a beer braised venison & onion recipe the other day and it would work just as well with squirrel.
Season and brown/sear the quartered squirrels in a Dutch oven, remove the meat and saute 2-3 onions (I added button and shitake mushrooms) then toss the meat back in and pour in 2-3 beers to cover and cook low and slow until the meat is just falling off the bone. I went 225 for 4 hours or so. After the meat is ready take out all the solids, then simmer the liquids by 2/3 or until they are nice and thick, check the seasoning, remove all the bones and put it all back together. Serve with potatoes, rice, or pasta. Next time my wife wants me to add cream and make a stroganoff to serve over egg noodles.
