 Got our Axis and Fallow mounts back today!

My wife went to Sonora and Kerrville and picked our mounts up yesterday. Couldn't be happier with the results! The fallow buck is hers, taken with Michael at Insight hunting from here on the forum. This buck scored gold medal with ROE. The axis is mine, I hunted with Heart A ranches in Sonora. These were our Christmas gifts to each other last year.

Nice mounts. What would you compare fallow meat to? I'm not really sure what to compare it to. We found it was very mild flavored, not at all wild tasting and was darker red than typical big game like elk or deer. I would almost say buffalo but more tender.
