I have a few questions since I have never processed my own deer. After shooting a deer, tagging it and taking it back to camp (my parents house). If processing a deer there do I still have to keep the head (proof of sex) with me until I get back to my house which is 2hrs away? Also do most of you quarter a deer and get tenderloins and backstraps and place in freezer or do you filet your steaks, make hamburger etc. there or wait til later. Thanks for any input.

I'm not trying to evasive but your gonna get the most accurate info from the Outdoor annual and/or TPWD.

In the Outdoor annual;
Pages 54 - 55 cover the definitions of final destination, permanent residence and quartered.
Pages 61 ~ 63 cover proof of sex, processing in camp and transportation.

Congrads on deer, and doing your own.

Technically, tags, head, and all must remain till final destination (your permanent address)

You 'might' run into a problem if you're pulled over on highway (between (camp)parents house and (final destination)-your house) with a whole deer that is more than just quartered if it's not frozen. Are you going to freeze at parents house?

That would probably then qualify as a cold storage\processing facility.

if you're going to separate the head from the processed meat.



I de-bone the quarters (don't bother w/sliced steaks), and package in 3 or 4 pound chunks whole (the size I'll prepare for family meal). Just my preference. I'll trim those roasts, and package all the trimmings and smaller pieces in 1 or 2lb batches, to run thru a grinder (later) for burger or (combined with pork) breakfast sausage. I find it grinds better when frozen, or partially frozen; plus, it's too much work (for me) to also do the grinding along with everything else, and I prefer fresh-ground.

My neighbor will actually separate each muscle out of a quarter, and package separately. He even de-silverskins each muscle portion. These can easily be sliced into nice steak cutlets.

Too much work for me; I let the crock-pot do the tenderizing, then the tough tissue is easy to separate.

If the meat has been pakaged and frozen it HAS reached its final destination. GW that lived on our ranch told us this first hand. He said some troopers or town cops sometimes dont know the game laws as well and could cause a rucuss about it..and even though your legal and can have any citation written dismissed the best way to keep all this from happening is to go ahead and fill out a Wildlife Resource Document before you get on the road.

Just my opinion, but you shouldn't freeze the meat that soon.

It'll taste better and have a better texture if you just keep it cold, but above freezing, for 3-7 days after killing it.

I agree with Bill....I typically quarter it up and leave it in an ice chest with plenty of ice and I leave the plug out of the ice chest so that the meat doesn't sit in water. I do this for up to 7 days and then process into sausage, roasts etc...

We make room in our fridge and quarter it up, debone it, and just keep it all in one big trashbag in the fridge forr 5 days or so. Then Ill get in there and cut all the steaks and seperate all the stuff to be ground. Then, usually grind the next day. Im going to try mixing some bacon in with my grind for the first time on this one.

Deffinitly better right off the bone but he was wondering about transporting it in a few days time
