Anybody got a recipe for the cutlets? I was thinking about pounding them thin and trying to chicken fry them but wasn't sure if they would be tender enough.

yes, do that....cutlets are for Chicken Fried for sure....they will be tender if they are cut thin, but may need to beat a little more....

If you have your deer processed, tell them to cut some of it into steaks and run them through the cutlet machine twice, They will be fork tender and ya can't beat 'em with mashed tators and gravy.
