made some yesterday from ground (wild hog) pork.

5-6 lbs fine ground pork
1 cup Italian bread crumbs
2 eggs
williams rib tickler season to taste. i mix some seasoning in the meat before i make the patties and put a little more on the outside.

refrigerate patties for 3-4 hours before cooking.

grill and just before removing i sop both sides with a heated bbq sauce and apple juice mix.

burgers are kind of sweet. kinda like a McRib sandwich.

i have a friend that has Crohn's which is a intestinal disorder/disease and she can't eat beef burgers without problems but can eat my wild hog burgers.

i sautee about 1/2 cup of chopped bell peppers + 1/2 c. chopped sweet onions in 1/2 tsp olive oil.

once the onions turn light brown, in a separate bowl i mix in the sauteed veggies into 1 lbs of ground meat (axis, whitetail, fallow) + ADD: 1/2 tsp ground black pepper + 1/2 tbsp freshly crushed garlic + 1/2 tsp salt + 1 tbsp olive oil + 1/2 cup shredded cheese.

i mix it by hand, kneading like bread to make sure it all mixes well.

next i divide the mixture into 4-5 burgers patties (by hand) and then throw them on the grill...

sometimes i'll cook some bacon to top it off, and of course i always throw the usual on the final burger: slice of tomato, mayo, lettuce leaf.

great - now i'm hungry... ;o)

hunter's other half - i don't shoot them, but i cook'em... :o)

80/20 ground beef and DilloDust. if using a skillet inside, apartment days, use butter in the pan. Or grill 'em!

Try ground akaushi beef. Simple thin sliced red onion, lettuce, tomato and a little bit of wasabi ketchup. Buns should be brushed with garlic chili infused butter then toasted.

Fresh french bread 6-8" slice in half length wise or potato bread brush with aioli and lightly grill.
85/15 ground beef. 2 half pound patties coarse salt and fresh cracked pepper grilled medium.
Spinach, mushrooms, onion sauted in bacon fat.
Top with bleu cheese.

chop onions and jalepenos and mix with the hamburger (I use ground sirloin)..also add to the mix a good mustard, a little horshradish and some worstashier sauce too. Grill outside or on the George Foreman inside. Melt extra sharp cheddar cheese on top.

Chop up some onion and jalapeņo, mix in shredded cheese and the soft bacon bits( the ones in the package not jar). Some Tony Chaceres and lawrys. Mix all that in with ground meat of your choice and grill. Take some apple juice and spray the burgers a few times while cooking.
