I have only had some from the high country. The taste is different because of the browse they get, (mostly sage and Pinon) where I hunt. Makes great sausage though.

only had muley buck, but we like it better than whitetail meat-and we really like whitetail. Steaks are bigger and more tender.
Never had Axis or fallow etc...

Trans Pecos muley's are good eating. Killed on last year cubed up a roast fried and ate it same day. Nice and tender. If you get one thats been eating alfalfa even better

We got two bucks last year off of a wheat field in the Panhandle. It is very tender and delicious. I have taken them from desert sage lands and they taste like what they eat. I think it depends on their primary food source as to how good they will taste.

So what do yours eat Roy? Cottonseed, alfalfa, protein and at times corn. The meat to me is a bit "sweeter" tasting, and I like it better then wt. I have had it now for the last few yrs from both mulie does and bucks, can't complain.

Killed a couple a few years back in the panhandle (peanut country) They had a nutty kind of flavor. Seriously.

I go out to my buddy's ranch in bakerfield every year to bow a doe for him (way too many does out there and not near enough bow hunters) and I think they're delicious. I even save/cook the heart and liver on them... something I won't do with whitetails.

Don't compare them to axis, cause that's just not fare. Axis is one of the best tasting out there. From what I hear from all my buddies is if you like w/t, you will like a mulie.
There are two kinds of people in this world, those who believe they can and those who believe they can't. They are both correct.
