After the 4th of July Holiday was over, we had a pile of smoked pulled pork BBQ left over around the house, so I wanted to come with something new and creative to do with it. My wife was craving Mexican, so we went to work in the kitchen and came up with an all out BBQ meal stuffed into a quesedilla! For an off the wall idea that we dreamed up in about 5 minutes, it was out of this world good and definitely something that I will do again with left over BBQ.

Here's what you'll need:

Flour or corn tortillas

Smoked pork, chopped or pulled

Fresh cut french fries

Cole slaw

Sliced Vidalia or sweet onion

Whole fresh jalapeno peppers

Shredded Mexican cheese

BBQ sauce

Butter (about 1 tablespoon)

Olive Oil

Start ot by building a medium fire in the grill, say around 350 degrees. I used the Weber Kettle for this cook and lit a full chimney of lump charcoal, banked on one side of the grill. I also used a chunk of mesquite for a little authentic southwest flavor. While the grill is getting going, slice up about half of a sweet onion and place in a grill safe pan along with a 1/2 to 1 tablespoon of butter. Once the grill gets going, you can cover the pan with aluminum foil and place on the cool side of the grate near the hot side so it can sautee. If you are using leftover pork, you can also place it in a grill safe pan and cover with aluminum foil, then place on the cool side of the grate for reheating. Next, core out a fresh jalapeno with an apple peeler or similar type knife.

When the grill is ready and you have heated your pork and sauteed your onions, lightly brush one side of the tortillas with olive oil and place on the grill directly over the coals for about 1 minute to lightly toast. Also, toss the cored out jalapeno on the grate directly over the coals and let it blister up.



Once your fries are ready, assemble the quesedillas by piling everything on there. Start with smoked pork, then the sauteed onion, pile on some fries, cover with cheese, add a layer of cole slaw, pour on your favorite BBQ sauce, then top off with a slice of the roasted jalapeno! Fold it over and put it back on the grill on the cool side for a couple of minutes to melt the cheese and blend the flavors.





Bring them in and serve them up with you favorite beverage, and that's it! They don't need anything else, it's all inside! These were a great way to use up some leftovers and were eye poppingly good!
