looks good. me and my cousins used to take the menudo,drain the juice,and mix the tripe and hominy with some refried beans. we would then add a bunch of cheese and onions and make burritos out of them. it was good for a change of pace every once in a while with the menudo.

I may not be an expert on menudo though I used to eat it every Sat. morning when I worked at the airport in S.A. but H.E.B. has some pretty good stuff in a plastic container close to the ground meat.

take away the jalapeno and the tortillas, and use a little bit of ground red pepper, oregano and bolillo bread toasted with butter. (and its better to use green lemon)

I love alot of mexican food i.e. tongue, cheek, brain. occasional cow eye but that stuff smells awful. Hangover or not amigos bolt
