What to do with rattlesnake.

Alright summer is almost here and the snakes are out. I was wondering if anyone knew how to cook rattlesnake?

bread it and deep fry it. cornmeal or some kind of batter works best.

Welcome to The Forum. The way Txbowhunter1 described it, is the best way Lora(campcook) and I have found. We take the carcass and cut it into sections about 3 to 5 inches long, then put the same type coating we use for fish and deep fry.
From our experience the better sizes for eating are snakes from 3 and a half feet long and larger. Also the snakes caught later in the year will have more meat on them. They are usually at their heaviest and in their best shape, just before they go into their dens.

Before you fry it, you can marinate it in spices and meat tenderizer. The smaller ones (not big enough to fry) make pretty good stewmeat.

Look at the way a catfish is built in the area behind the head, where its guts are. Basically a snake is one long chest cavity with ribs from behind the head all the way to its anal opening. The meat on a rattler is basically all back strap.

I would post the recipe from Tim Love's Lonesome Dove Trail but I think it would be a copyright infringement. He has a cookbook that has alot of great recipes. He has everything from fish to rabbit recipes. He has Rattlesnake cake and dove tacos that are unbelievable along with others. Tim is the executive chep of the Lonesome Dove Bistro in the Stockyards.
