Found it! I posted a recipe on here back in July, here it is: Meatloaf is one of those meals that people have HUGE bias about. Me, I like pretty much all of them. With cheese, without, with ketchup or BBQ sause, onions or bell pepper. Well, I made this simple little recipe and it came out GREAT!
1 pound ground sirloin 1 pound ground venison 1 packet of Lipton beef and onion soup mix 1/3 cup of ketchup 2 eggs 2 cups of bread crumbs 1/2 chopped onion 1/2 cup of chopped cilantro 2/3 cup of water 3 tablespoons fajita seasoning
Combine all and throw it in a greased or non stick meatloaf pan. 350 degrees for one hour.

Put oatmeal in there instead of bread crumbs. Also, try Kraft BBQ sauce. It's usually better if someone else cooks it.

this makes great meatloaf SHOOT FROM THE HIP MEATLOAF
coupla pounds deer meat (or beef)
4 raw eggs (ok maybe only 2)
I don't measure nuthin (shoot from the hip)so... get a large can of Durkee onion rings, (the kind they put in green bean cassarole) these take the place of crackers (or whatever) as filler to hold meat together, I use 2 or 3 hand fulls
one onion the size of a baseball chopped
I use ketchup, but you can use catsup, or tomato sauce, again I don't measure but if I use tomato sauce it's 2 small cans (I think 8 oz)
pour in about a 1/4 cup of Pace picante sauce
add just a little more fajita seasoning than you "think" it needs
NOW the rest kinda depends on what you like...
I HATE bell peppers so I use 3 or 4 de-seeded japalenos diced up
sometimes a small can of mushrooms and/or black olives
much all this together with your hands
put this in a meatloaf pan (or two) leave a little room (1/2 in) on the sides for expansion
squirt ketchup across the top of it and put a 1 in wide stripe of picante sauce down the middle
take your best guess at what temp to set the oven on... I think I usually go with 400 or 350 and pop it in
when it "looks done" it's probably done... I like mine when it STARTS to get black and crusty on top!
