My mother-in-law said she wanted to roast a duck so I plucked a drake Mallard a few weeks ago and froze him.

Rubbed it with butter and olive oil, salted and peppered it.

My wife went out to the yard to get some Rosemary to cook with it and actually picked Lavender hammer

Cooked it on a broiling pan to let the grease drip away. Covered with foil first and then removed the foil to brown it.



Here's how much meat it had on a salad plate. Next time I'll probably do two. My daughters loved it. Even gave some to the 8 month old. The 3 year-old wont eat chicken but loves duck.

Would be better with Rosemary next time.

Would it be possible to do a fire roasted duck as in putting it on a spit turning slow over low constant heat confused2

also try sticking an onion/orange in the cavity as well-- whole roasted duck-- good eats--- we always roast 3 for Christmas--make a really good sandwich

Will try the orange next time. Maybe an orange duck Chinese dish.
