This is a pretty simple one. I fix it in the crock pot, but it could be done stove top.

Quick sear your pork (we used a small tenderloin) and place in the crock pot. Add a can of vegetable broth, a packet of pork gravy mix, some onions, and some mushrooms. Let it cook for several hours. About an hour before serving add a bag of Cuban black beans and rice mix and three cups of hot water. Cook on high for another hour.

That's it. Serve with collard greens.
