It's too warm to allow a deer to hang properly outside. How long would deer meat stay good in the fridge bleeding out until you absolutely had to have it packaged and in the deep freeze??

I wouldn't put it in the fridge. To properly store it, put it on ice, and drain and refill ice daily.

I asked a processor that question and he said 2 weeks. I've personally done it for 10 days. As long as there is plenty of ice and the meat has a whitish, kinda washed out look, you're good for 2 weeks.

OK. Back to the topic. I know Ice/Salt/Vinegar is the best choice. However, with what I had going, I didn't have time to clean the ice chest and get everything packed. It's been on the fridge since Wednesday about lunch time.

Good to pack and freeze or not?

I'll bleed out in the cooler for 5 - 7 days, but I did something that worked out real well this year.

After bleeding out in the cooler for a week, I processed out 2 deer from saturday night to sunday morning.

With my grind meat, I made an extra long foodsaver bag, put the chunks in, took out the air.

In the fridge, I propped the meat up with a couple water bottles at an angle and let the long flap hang over the crisper drawer.

I was amazed at the amount of blood that funneled down in the couple days before I ground the meat.

I put the meat directly on the ice. Be sure to put a layer of ice on the bottom of the cooler. If the meat is put directly on the bottom of the cooler it can spoil even w/ a lot of ice on top. You need to cool off the bottom of the cooler and the meat will melt that ice pretty quick.

I prefer a couple days at most for deer. I try to process it in a day or two after killin' it. It may take me 2 evenings to process it if the wifey isn't home to watch the boy.

I do it a little different. I put the meat in bags with water in them and on ice. Then drain and refill the water daily. I feel that the meats prolonged direct contact with ice burns it. Nothing scientific, but have noticed hard, discolored spots in the meat at times when I put it directly on ice. I don't seem to see that when it is in bags.
