I got an emu this past weekend. This is one odd creature.
I've plucked him, quartered him out, as much as you can with an emu.
Most of the meat is oon the thigh and leg ( drumstick ). It is very red meat.
There is a thick layer of subcutaneous fat almost over the entire carcas, gold color.
I have cooked some of the meat, which turned out pretty good.
I was thinking of grinding the rest, both for saugage and for burger patties. Should I grind the fat with the meat, in either the sausage or the patties?
Or are there better alternatives.
This is a new one on me, I'm open to ideas.

How on earth did you end up with an Emu?

I don't have a clue on what your suppossed to do with one. I have seen emu burgers for sale someplace before though. Just a guess, I would think the fat should be removed and discarded. Then like other game meat for sausage and burger, add pork fat.
I would not think you could go wrong with that. But then I have never butchered an EMU, so what do I know.

Don't add any fat. Just use oil when cooking. Enjoy.

Emu is good stuff. Cook the breast halves / and thigh qtrs like briskets.

Were you in Bosque county..Several years ago a EMU place went under and they released what animals they had left...Somehow our lease was 4 miles away and several made it to our property..So they began hitting the feeders pretty regularly...That didnt last long when the landowner said to shoot them...You should have had a lot of breast meat..That is where 90 percent of the meat comes from...I have had emu meat from the store..They cut them into steaks and grilled them..Pretty good...

To add to this.
Apparently emu's store fat kind of like a camel. This bird, had just cakes and cakes of golden colored fat.
I'm probably gonna experiment with this this once I get my meat grinder going.
I even read there was quite a market for emu oil. I think that all phased out, maybe it was a fad, but apparently there were a lot of people who thought it helped with arthritis.

I think the oil is still thriving... some folks swear by it.

I used to raise these things a while back. It's lean red meat and you can do just about anything with it that you do with any other kind of red meat.

When the craze was on about these birds I thought the ostritch was going to be used primarily for the meat.Emu's were raised for the meat and the oil but I think the oil was to compete with alovera products which is skin care.
I have been wrong before. confused2
