I agree. They are all corn eating, deer spooking SOB's. The sows & young boars do taste pretty good.

My 8 year old son could shoot an 80 hog and it would be a trophy for him....

In general, the true trophies will fit whole in your oven. Other than that I find the ones that get to bask in my mesquite/hickory/oak/apple/peach/apricot sauna to be trophy class. Some others go through a rigorous grinding ritual and make a fine addition to my spaghetti sauce, chili, or stuffed bell peppers.

If when you are solo and you have to cut one up and extract it from the woods in multiple trips, then it will usually make great dog food. Some people like to collect mementos, like teeth or heads, of these dog food grade hogs for some reason. wink

That said, the best eating hog to ever leave my smoker was a near 300lb South Texas monster. My father-in-law had shot a few large hogs from the same place and they were all just plain nasty. I was certain that this big fella was gonna be tough and taste rank, but it was as if he had been penned up for a couple of months and finished on sweet grains and fine beer.

Many folks will tell you that any hog over 200lbs will be nasty tuff and rank and wont be worth eating. I cannot disagree more with that. I have eaten several hogs that were well over 250lbs that were delicious. Its all about how the meat is prepared and cooked. I shot this one boar that was around 350, a big nasty old smelly hog. I was certain this bad boy was gonna taste perty bad. My buddy didnt want to mess with it and told me to leave it lay. I cleaned it an cooked the quarters on a smoker and it turned out great. Fed it to a bunch of folks and everyone commented on how good it tasted.

I have found though that most boars that we have cught and killed with dogs have been pretty rank. They tasted extremely gamey. I beleive it is because the testerone has been pumped though their body and their blood was pumping.

Agreed. I posted with tongue firmly in cheek. Most cuts just can't be cooked like their store bought counter parts, but are exceptional if cooked correctly.

The "barely fits whole in oven/smoker/grill" test is my trophy mark. For one reason or another, I have yet to invite all my family and/or buddies over for a whole hog party, but I look forward to the day I do. The hogs I usually pack the freezer with are young 80-120lbs sows. They taste great and do the most to help with the population explosion.

I think how the animal is gutted & processed or if it had been paunch shot most affects the palatability of the meat. To my taste there is nothing more nasty than a urine marinade, except for maybe muddy duck.

In the end, I just cook 'em all and let my wife & kids sort them out. wink

Thats what I have always said but I was just curious. As I am setting up this hog hunt I have seen extra charges for "Trophy Hogs" and I was just wondering what , if any,criteria there was classification.
