My co-worker is, currently, interested in eating javelina. Are they're any concerns with eating javelina and has anyone ever tried it?

Used to eat it all of the time when we had them on our place. No concerns.......just prepare and clean properly.
Need to make a clean head shot...DRT....immediately cut off musk gland in small of back. Gut, skin and put on ice. I have eaten it fresh. It is very good!! Oh.....and try to kill a young sow if you can. Too me, they just taste better.

very edible, but I like to mix a small one, preferable a female, (very important) with scrap deer meat and make tamales, ie lot's of seasoning.

If you start messing with that musk gland, your going to be in bigger trouble then you want. Skin it out as you would any other animal. Don't cut it before hand, don't V cut it ect. Just skin it out and the gland will come off with the hide. Most mistakes are made when a person tries to de-musk it and pops the gland and goes all over the meat.
The meat is Ok, not something I would eat on a regular basis. There are a couple of backstraps that I have grilled ect. Makes good breakfest sausage. The meat is very lean, thus slow cook, or quick grill.

I agree also, skin like anything else and be careful around the gland. I have put them in sausage and never could tell a difference, and if you take the hams or straps and season it like you would a brisket or ribs wrap in bacon and foil and bbq low and slow, it is pretty dang awsome, i tried it the first time and by time everybody else got there not much was left, it was tasty.

Hummm... I must have done something wrong as I've said several times before, I shot 2 and we tried cooking the 1/2 a dozen different ways... always tasted like dookie!

Does anyone have a picture of the musk gland on the javelina? So a first timer knows what to look for when de-glanding a javelina. I think if I had that information I would probably venture to try cooking one.

Not going to pay to hunt them and only reason I would take one is for good euro mount! Aren't they a rodent anyway...nah pass on them as menu item!

pull the hide off like u would any other animal, and slow cook the ribs, man they are goooooooooooooood..... eat'em all the time,

Lay the backstraps on a wooden board and season well with salt and pepper or whatever you like. Slow cook it over an open flame for at least an hour. Then, throw the javelina away and eat the board.

You might as well eat a rat because that is what family they are part of! LOL

We had a guy a couple of years ago clean a young boar in camp. He seasoned it up and cooked it about 7 hours slowly on the pit. Not very much of it got eaten that night! In fact, I believe he was the only one to take more then one bite of it! LOL



High fence, low fence, no fence, it really doesn't matter as long as you're hunting!
