Ive always bought mix at the grocery store, and I really don't care for it. Its not bad, but its not really good either...Suggestions??

Depending on how much if a larger batch just increase the ingredents. Guessed at some of the ingredent measurements since I rarely measure anything, adjust for your taste but the cornmeal and flour porportions workwell.

1/2 cup Selfrising cornmeal
1/4 cup Selfrising flour
1/4 tea spoon black pepper
1/4 cup onions chopped
some chopped Jalapeno pepper.
1 egg
add milk to get good consistancy for the batter

Thanks! I made it last night, and it was way better than the mix I had been using!! My girls thought the jalapeņos were a little much, but I thought it was just right... Thanks again

1 can cream style corn
1 cup corn meal
chopped onion
chopped jalapeno
chunked cheddar cheese
fry in oil
non stick skillet is best so cheese doesn't stick to pan.

Glad you liked it. My Mother was not a fan of jalapeņos so she would mix it up, fry her some without then then stir the jalapeņos in for the rest of us.
