Emeril's ESSENCE Creole Seasoning (also referred to as Bayou Blast): 2 1/2 tablespoons paprika 2 tablespoons salt 2 tablespoons garlic powder 1 tablespoon black pepper 1 tablespoon onion powder 1 tablespoon cayenne pepper 1 tablespoon dried oregano 1 tablespoon dried thyme

12 cups of salt 4 oz. can of black pepper 2 0z. can of white pepper 2 oz. can of ginger 1/2 oz. can of cayenne pepper 1 cup of coarse chopped garlic
Put all ingredients in a crock or big glass container. Mix well and cover with a cloth and let set for at least a week before using. Stir every other day.
As you can tell, this recipe makes a good bit, but you will find it excellent for seasoning both beef and pork. As a barbeque rub,or for pork ribs, its all I ever use. My steaks are seasoned with it and brushed with olive oil...For seasoning hamburger, delicioso!

1 cup brown sugar 1/2 cup paprika 1/4 cup black pepper 3 Tbs Chili Powder 2 Tbs Onion Powder 1 Tbs Garlic Powder 2 Tbs Cayenne Pepper
I use this on brisket, ribs, even dove. Hard to beat that sweet heat

I got the itch to experiment with flavors. Here is an excellent outcome for you to try ~ It is pretty interesting. I added Schezwan peppercorns and coriander and modified amounts. I toasted the coriander in a black iron skillet. I pulverized 1 cup of pink Himalayan sea salt, 1 cup of Tellicherry black peppercorns, 2 cups sucanat and ½ cup coriander. The paprika and onion were already a fine powder. The garlic was granulated. I did not pulverize the granulated garlic. All of the ingredients are organic and the finest available. Most come from Whole Foods or Central Market. The coriander I used is whole fresh organic. The paprika is organic Spanish sweet already pulverized to a fine powder. Here are the amounts ~ 4 C paprika (sweet Spanish) 1 C onion powder 1 C garlic (granulated) ½ C coriander pulverized 1 C salt (pink Himalayan pulverized) 1 C black peppercorns (Tellicherry organic pulverized) ½ C Schezwan peppercorns pulverized 2 C Sucanat (sugarcane crystals pulverized) I mixed the above ingredients as a base. Now, I am going to try various chili peppers. I mixed a small 2 cup batch up and mixed in 10 Fresno peppers and 20 arbol peppers pulverized. It makes a distinctly warm, long slow burn, but you have to wait on it. My next batch will have the distinct cayenne burn just for show. I will also double the arbol and Fresno just because. That’s my notes for now ~

Myron Mixon's Meat Rub for beef and also the Rib Rub for the obvious. Both are great!

I actually had found that Lawry's seasoned salt had made a cinnamon chipotle rub. I tried it out of curiosity and it was pretty dam good.

1/2 cup paprika (Any will do, but Spanish Paprika is best…I do not recommend “smoked” paprika with this recipe, as it added a hint of “sweaty foot” to the meat.) 1/4 cup chili powder 1/4 cup brown sugar 2 tbsp. McCormick’s Seasoning Salt or Lowry’s Seasoning Salt 2 tbsp. oregano 2 tbsp. Kosher salt 3 tbsp. course ground black pepper 1 tbsp. onion powder 2 tbsp. garlic powder 1 tsp. cayenne powder 1 tsp. ground coriander (ground can be difficult to find, so I buy it whole & grind in my pepper grinder.)

Williams barbecue for beef.
Williams rib tickler for pork (ribs, loins and shoulders).
been using rib tickler and a little Tony's original for the wild hog burgers lately and can't keep enough cooked around the house.

Brisket rub sold at Tallent's in Riverside, TX. I believe it's made by Ranchhouse seasonings.
