Just curious if anyone has eaten water buffalo?
If so how was it, and what are your thoughts on it?

Haven't had the opportunity yet, but should be very similar to the Cape Buffalo I have eaten in Zimbabwe. Backstraps and tenderloins are very good, the ox tail soup when properly prepared is wonderful!

Shot one in March last year and got about 260 quarts of meat from it. The meat is very good but different than other wild game that I have had. Some parts taste like turkey, others like pork, and some like other animals. It's more orange than red/deep crimson of other animals.
If the price is right, I'd recommend considering doing a hunt for one. Could be a great way to get a lot of good meat at a low cost per pound.

I won a hunt for a water buffalo in a raffle.
I was just curious how the meat was.
Did you get it processed like you would a beef, or more like you would a deer?

I would think it would depend on the age and sex of the animal. Just like cattle or Deer the older it is the tougher it is. Hamburger is usually a good solution for an older animal. Good luck on what the end result is.

Never processed domestic cattle so I just did what I normally do for wild game: steaks, roasts, and ground (no fat added). With the ground, I've made my own brats multiple times and they've all turned out well.
I figured I'd just keep thing simple on the processing side and then get creative on the cooking side since there is so much meat.

I had some at the Ox ranch several years ago and it was great. Very close to the taste and texture of beef. The cut I had was marbled lightly and very tasty!
