fallow buck

got invited this weekend to do hunt by Hondo, TX this weekend.
Shot a Fallow buck cull (young) as the land owner was selling the property and needed some removed.

I should have asked but when do they go in rut ?
Don't want to eat the meat if it is going to be ultra ripe..
I will give it to someone not waste it of course.

my son shot his big fallow that was in the middle of the rut. it tasted great.

outfitter told me late August/Sept

did he age it?

you must have different fallow to us, the rutting stench of a fallow goes right through the meat and taints it something shocking.

Jack,
I've have eaten Fallow Deer meat from a buck shot in November (our Fall ) and the meat tasted fine. It was given to me by a friend who shot it and took the deer to a local processor so it may or may not have been aged. I am not sure why your Fallow deer in Australia tasted so bad (I recall you mentioning that to me before when we talked about how bear meat tasted) ......or why the one I tasted was okay.

I shot a fallow in October which was during their rut and the meat tastes fantastic.
