Here are the USFWS results from a dozen woodcock wings they requested I send in last year. Mostly male birds but all but two were adult birds - which was interesting.
Larger results showed they estimate less than 100 woodcock hunters in TX with less than 1000 birds taken annually. (Contrast that with Michigan's 35,000 hunters and over 100,000 birds taken). I don't think we Texans are hurting the population. smile
I'll be participating in this study every year.

How do they eat? I've heard everything from horrible to sublime.

To me, just like a big dove (dark meat breast). I've heard the same as you from others.

Michigan's total probably includes grouse hunters.

Michigan has like 6 million more acres of public land than Texas. I'm sure that has something to do with it.
