Better Results Than Some Years

Son and I went snow goose hunting last weekend up in NW Missouri near Mound City. Did fairly well- As title says. Went with a new guide service that we had not been to before. Ended with 80 geese (mostly small Ross) over a three day hunt. Last day was the best- 36. Wished we could have spent a few more days in the area but that nasty four letter (WORK) interfered with that. Brought home half of those geese and breasted them out. I have 38# of meat to make into stick sausage and jerky. I vac pak them into 4# packages.
NOW.............................. to Texas to add some pork to the freezer. Be down there the weekend of April 13-15.

don't know about geese, duck make might fine burgers

I love the Lem summer sausage.. mix with 20% pork fat, add some mustard seed and squirt into #3 casings.. delish

When we had our sausage made, we added in all the hearts livers and gizzards,.....MMMmmmmmm,.......
