Favorite Dove Recipe or Cooking Method - 08/29/16 05:00 PM

Always looking to try something new, so lets have em. Favorite way to cook 'em up, and what what do you use...

My personal favorite thus far is Bacon wrapped dove breast with a sliver of jalapeno tucked in there. All this wrapped up with skewers, then glazed in Lawry's liquid Hawaiian marinade (the stuff you buy off the shelf). Throw those suckers on the grill and your set.
So easy you can do it in the field if your camping out.

Mine is real simple. I just take the breast and cover with Woody's marinade, cut a fresh jalapeno in half and stick it on top with a toothpick. I then grill uncovered in a foil pan on indirect heat. Normally takes about an hour.

Marinate/season like you please to the breast, sliver of jalapeno, sliver or orange bell pepper, sliver of sweet onion, wrap in bacon and grill, the right before they are done finish it off with a roasted raspberry chipotle sauce brushed on. My buddy does it to his ribs and it's a nice little pop/change to the usual. I forget the brand it is, but I get it at HEB, which I've seen it a multiple ones before.

dove stew w/dumplins and lotsa gravy and French bread....
family and neighbors started this before WWII...
we do a pot w/at least 100 opening day...
or fried whole doves w/gravy...
any side you like....

My favorite is breasted, sliced with a piece of jalapeno, then bacon wrapped. Mrinade in Italian dressing cut with some vinegar for 24 hours and grill. Not different or unique per say, but is still my favorite.

Filet dove breast and marinate in a combination of teriyaki sauce and pineapple juice.
Take filet out and place a chunk of pineapple on each side. Then wrap in bacon and grill or smoke. Baste with more teriyaki sauce.

Dove filets are good in jambalaya also.

Fried dove with mashed potatoes,biscuits and gravy is hard to beat though.

Fried and dipped in cream gravy. Also, i like dove fajitas. Grill or sear in cast iron skillet to medium-rare. Slice, toss in butter, throw in a fresh corn tortilla with fresh pico and avacado slices. Jalapeno, bacon, cheese is ok but its too typical and you cant taste the dove.

I'll admit I'm a slave to the bacon-wrapped grilled dove as well (but I do love chicken-frying them).

My favorite:
- Mix together cream cheese, canned crushed pineapple, and pecan pieces
- cut a jalapeno into 1/4s (cut one lengthwise, once width-wise)
- cut bacon strips in half lengthwise
- throw the cream cheese mixture into your jalapeno, top with dove, wrap with bacon and pin with a toothpick
- most important- don't overcook. dove doesn't need a lot of cook time! Just enough to crisp up your bacon

This is really just a method of getting bacon and cream cheese together, but hey, I like it. The cut lengthwise bacon gives your a more complete wrap and really helps hold it all together, because it will crisp up as it cooks.

Dove a la fredo

Simmer dove breasts in a little oil, Worchestrshire sauce, and minced garlic. Then add diced purple onion, chopped broccoli, and Alfrdo sauce. Simmer. Serve over a plate of cooked pasta swirls, and a slice of garlic bread. food

I've said a million times a duck and a dove taste just a like. People look at me all crazy. Just a larger piece to cover with the duck. Obviously I feel your wrong I can cook either and anybody would eat them. Glad to see someone who admits it.

Favorite is jalapeņo cream cheese and marinated dove wrapped in bacon!

Another way I do it is to marinate the dove in eggs and buffalo sauce. Then toss them in flour double dipped and fry them up. After frying them smother them in Buffalo sauce and bake for 10 minutes.

Hot wings Ala dove!!! It's a great take on a favorite dish!!!

Throw them in the de-feathering (plucker) machine
Gut Them

-Put 8-10 whole birds in a pan with whole garlic cloves, onion, bell pepper, celery and, carrots on the bottom
-Season with Salt Pepper
-Add fresh rosemary sprigs
-Add 2 cups of Chicken Stock
-Cover with Tin Foil
-Cook in the oven at 400 degrees for 45 minutes
-Remove Tin Foil and cook for 15 more minutes

Use the pan drippings to make gravy.

Serve with Mash Potatoes and the Drippings Gravy.

Saving this for the future. I usually just grill with lemon pepper and enjoy. Followed by a nice steak. I think of them like appetizers that I look forward to.

Been hunting them for dang near 60 year's and still can't stand the taste of them, but I do love to hunt them. I've hunted them in Texas, Mexico, Arizona and New Mexico and still haven't found one worth eating. Give me Quail and it's a whole different story.

Both of these recipes are excellent with dove. The second recipe is a great teal recipe that everyone loves.

Nuthin fancy. Let the doves brine for a day or two in the beer/wild game fridge. Sprinkle some steak seasoning on 'em and do the jalapeno and bacon thing on the grill.

I don't like marinades, they take away from the flavor. Salty water will take the excess blood (and gamy) taste out of 'em. Just grill them medium rare and they are great.

You know the old saying...."one man's trash is another man's treasure"!

I've killed elk, caribou and deer over the years...I'll take dove over all three hooved creatures I mentioned.

Agree completely. I hate liver, but I like pate, so I chop my doves up with pancetta and make pate.

Didn't have much time so I just fried a couple in coconut oil and sprinkled some seasoned salt on em. It was amazing

Cooked a limit on the smoker last night, just BBQ sauce, it was great. Letting birds age at least 3 days is key to them being tender.

I never felt dove was all that good either. Have had some that was pretty good but now quail is another story.

Dove Kbob's with Kikkoman Teriyaki Sauce

Note: "Kikkoman Teriyaki Sauce is a special Teriyaki Sauce with brown sugar, Sesame, ginger and other Asian flavors"

Fillet the breast meat off the bone. Let sit in Kikkoman Teriyaki Sauce over night.
Cut up onion in one inch squares
Cut up bacon in one inch squares
Cut up red bell peppers and Jalapeno peppers

Skewer Pepper, onion, dove meat, bacon, dove meat, onion, Pepper until Skewer is full
Then grill and baste each side for about 4 minutes each

You will your guess wanting more

Looks delicious! How long do you smoke them? To age them do you just keep them on a plate in the fridge? Or are they marinating in the bbq sauce for 3 days?
