Kitchen knives

So i have made a ton of hunting knives, and i want to make a set for my (wife's) kitchen. Our J.Henkel set has like 6 or 7 knives. I think really only maybe 3 are needed. I was looking at Jantz and they have some nice blades that are already cut (cheating, I know).

I am looking for feedback on things to know about kitchen blades. steel, handle material, anything!

You need more than three. The small knives get the most use. Also need two butcher knives, one big, and two French Chef's knives, one big. You need a big long slicer, like a steak knife super sized.

If you've got a good Henkels set, maybe just add a few custom to it, or a set of steak knives.

This is the set Mike C made for me.....large cleaver, "brisket assassin" carving knife, and a small boning knife. The half-moon was a knife he made from a piece of scrap that I liked so I asked him to include it in the set.

I think this is a perfect set.....the only thing I would consider adding would be a filet knife.... 2cents

Here is my kitchen tool set. I have more specialized knives but these see very regular use. You might want to make the handles dishwasher proof, just to make them waterproof. They'll get wet constantly.

Crap...now something else MikeC will need to make me in the near future...these look amazing.

At Jantz, look at the Russell Green River blades. They are high carbon steel and they will certainly cut. Put a couple of pieces of wood on and you're done.

Using the blades from Jantz is only cheating when they are misrepresented, we all knew that though.

I use my butcher knife, medium blade length chef's knife , boning knife and a paring knife all the time.
For handles I would say something that can take moisture just in case in gets dropped in the dishpan and not noticed.
I like a blade my sharpening steel will put an edge on without having to get out a sharpening stone. That being said a blade that doesn't have to be sharpened every other time you use it is sure nice.

Looking forward to see what you come up with.
