My best friend and I lit the smoker yesterday. I've been wanting to try smoking a venison roast and yesterday seemed like the perfect time to try. I deboned a shoulder roast, rubbed minced garlic and spices on the inside, rolled it all back up, and spiced the outside good. Then on to the smoker at 225 until 150 in the center. It took about three and a half hours. The Dillo eggs are peppers stuffed with cream cheese, cheddar, and garlic powder and wrapped in deer sausage. It was AWESOME!!! I ended the day with a huge hug and smile from my little guy. This doesn't happen anywhere often enough. It was a wonderful day!!

Very nice!! Yes, how was the tenderness of the venison. I have been wanting to try different venison smokes.

It was VERY tender. I wouldn't go any higher than 150 internal or it would dry out FAST. I let this one rest for more than an hour for the same reason. I was very pleased!!

You (or someone else) posted about the Dillo eggs. I made a batch last week on the BGE. Dang good eating, but it was the last of my deer meat.
