Its been a long time ago, but I remember when we got our first new big HEB they had "Premium Axis Flank" for sale at just over $20/lb. That was 10-15 years ago.

Red deer, it is imported from outside the states but accounts for most of the over the counter venison I've seen. They farm them like cattle in some places.

Friend of mine travels to NYC regularly on business. He told me he was with clients and saw axis venison on the menu. It was $200/plate. Since he was on an account, he ordered it. He said it was delicious, but not any better than I make (he might have just being nice) , but he said he only got three 3" medallions.

This is more important to me than the taste of the sandwich or the price. My hat's off to them for offering something like this in our current environment. It takes some serious stones to do that.
