How much to cook?

How much to cook? - 10/03/18 06:52 PM

Cooking for my little boys birthday party. Will have about 60 people. I originally wanted to do ribs, bbq chicken quarters and sausage with sides.

How much of each do yal think I need? I was thinking 6-8 racks of ribs, 20 lb chicken and 20 lb sausage?

The three meats is messing with me, and I don't know why I want to do those other than it sounded good lol.

Sounds about right. I usually do about a pound per person. Some will eat more others less. I rarely do ribs though. If we are talking brisket or something along those lines that’s what I figure. You are probably right on the ribs for racks though.

A quarter pound of meat per person. I’d give kids hot dogs.

Yeah count on doing hot dogs for the kids, I learned that one time that a kid will take a hot dog over other bbq meats.

sounds about right but I think you might be a little short. 2 ribs per person (13 ribs per rack x 8 = 104 / 2 = 52) I'd probably do 9-10 racks. Chicken quarters is tough to because you will only have so many pieces and everyone won't get a piece (don't know how many quarters per pound but pretty sure thats not nearly enough). I'd do about 60 thighs (cheap too). Sausage I'd slice up into thin pieces and should be fine. Thats a lot of food tbh but people will load up (plus left overs are great). I always make more than I need I hate to run out of food when I do something like this. Now if your doing the serving that should be fine (cept the chicken)if you give the kids only 1 rib. Also, people are going to want 2nds.. Really going to depend on how many children to adults if you want to serve the same.

I'd make (for adults)
9-10 racks
60 thighs (boneless will cook faster and will make life easier when cooking so many)
20 lbs sausage
plus sides

people will eat a lot if they can free serve lol especially if they are hanging around all night.

Agree we always did Hamburgers and Hot Dogs for the kids. redchevy I am guessing there will be plenty of adults to enjoy the ribs, bbq yard bird and sausage up

pulled pork is cheap, easy and good too. better alternative IMO and I'd go with 20-22lbs pre cooked weight

There will be hot dogs for kiddos. Its a family party, so we definitely have some kids in the mix but only about 10-12 the rest are teen+

It will be buffet style. I have 58 invited pretty sure we will have a good turnout but no way they all show. I was thinking the same about the quarters, may do some quarters and some separated into thigh/leg. Who knows the three meat may go to the way side, I wont know for sure till I walk out of HEB.

thanks

Add a pork butt smoked and pulled. Flour tortillas, pico and guacamole. Maybe a pot of beans to be sure. With the dogs that’s leftover land.

this sounds close to me ... we usually figure 1 lb per person uncooked meat which would leave a few leftovers even with heavy eaters. When I am cooking for a crowd on my smoker, I usually do fajitas ... beef, chicken thighs and pork plus toss on some link sausage & hot dogs if kids will be around. Couple packages of tortillas and a pot of beans goes a long ways. But I do like ribs, just takes longer to cook.

Sounds about right and should have plenty left over. I think we all cook more than gets eaten when bbqing. I expect too. Some have other plans to eat, already ate, liquid diet, diet, vegan, etc... How much beer will you have?

Re: How much to cook? - 10/08/18 01:17 PM

we had between 40 and 50 show up.

I cooked:

36 leg quarters
5 racks of ribs
16-drum sticks
20 lbs sausage
5 lbs pinto beans
and 2 large aluminum pans of baked mac n cheese
and made coleslaw with 3 heads of cabbage

I bought a little less than I originally planned because we got word some were not coming for sure and we had way too much food. All food came out great I had 3 ribs left a bunch o chicken and quite a bit of sausage, I vacuum packed it last night and we will have awesome leftovers for a while to come... gonna make good eats at deer camp with no work or time to prep it.
