Bob I'm born and raised Texan. Not sure where this originated from but can still remember my Dad smoking bologna when I was young. I crave it often.

Get a tube of the cheapest bologna you can find. Beef, chicken, pork, road kill, and floor sweepings. Leave it in the plastic wrapper but poke it all over with a two prong fork to ventilate it. Then smoke it low and slow. It will turn dark and weep from the holes when it’s ready. Low and slow is important, don’t rush it.

When it’s done, leave the wrapper intact and slice off a healthy chunk, unwrap and grill/glaze it like the OP did.

Take a bite and slap your mama.

I had a bunch growing up as a kid also, was in my brown bag 80% of the time for school lunch.

Never had it smoked and bbq, that looks like a delicious sammich food

I fry that up for my kiddos at least once a week! They call it sombreros.....cause of it puffing up in middle. They like it super crispy on edges

Not sure what brand Bill. There is a meat market in downtown Lewisville, just told the girl I wanted one slice of beef bologna, she looked at me funny until I told her I wanted it an inch and a half thick.
I do it pretty much as Cast described but I peel it and score it. I let it go about an hour and a half then put just a little bbq sauce on it and let that go another 20-30min

I'd eat it again today of there was any left
Finished it off last night with a little Blue Bell with some pecans and a good drizzle of chocolate

I've had it fried in bacon grease, with bacon grease Texas toast, and a big slice of home grown tomato.
