i love the vegetables more than the meat. I always cook extra vegetables with the roast. Yours looks great!

is that cabbage? did you cook that along with the roast, potatoes and carrots? looks good, my wife does similar (without cabbage) in a crock pot. About the only way I care much for carrots.

I don't think you can ever have too many onions and carrots swimming with a roast.

Also every once in awhile I get the royal dutch potatoes to toss in with the roast, those little naturally buttered flavored potatoes are delightful.

Cooked in a pot on stove, first brown the roast, add carrots & potatoes, after a bit add cabbage. Sometimes we do add onions.
No crock pot.
