It's at 170 degrees now but sweating good. Been on since 10:30 last night.

17 lbs but I bet I cut 5 lbs of fat off of it. The marbling was awesome. This one came on exactly right. 14.5 hours cooking time. Going to seal up some bags for meals for later.

I have never had brisket freeze well. I've tried sealed bags, freezer paper, butcher paper, plastic bags...it never has the same texture as fresh cooked. Now pork freezes fine, but cooked beef is a different story for me.
Any tips?

Mine seems to work great. I typically just microwave the frozen bags for 2 minutes and they taste as good as they did originally and even better sometimes due to it soaking in it's own juices. We use this sealer.

Strange. I always cook an extra brisket or two just to slice/weigh/bag & freeze (Food Saver bags). I don't like putting meat in the microwave, but bags thaw out quick in warm water and/or oven for quick meals. Like Bobcat said it's often better.

Vacuum pack it. It will be fine.

I usually do an additional brisket & pork butt, once cooled, cut into chunks big enough for 4-5 people, put in vacuum seal bag along with some of the rich congealed jelly from the cook (scrap off the hard grease) and vacuum seal. Easy and quick meal or when unexpected guests show up. I usually take a large mixing bowl, fill with hot water and drop frozen package in, replace water with more hot when it starts to cool. Once thawed, usually put in corning ware dish and pop in the oven for a while. comes out great every time.
