looks like this wonderful rain is going to curtail grilling outside tonight, bone in ribeye

how to cook indoors??

brown in skillet, finish in oven?? how hot, how long?

just watched the weather, should be good after 6:00 till late tonight. I my try to cook it in cast iron over charcoal grill. I hate to heat up my house anyway in the summer

Cast iron skillet, olive oil, salt and pepper. I usually brown each side for about a minute then put in over at 350 for 6-7 minutes let rest. Not as good as grilled but it's edible.

This....Turn the broiler up as high as it will go. Leave the over door open so the burner doesn't go off. 6-8 minutes per side depending on thickness of steak.

Hot skillet, hot olive oil, (don't let it sit in cold oil, it will soak up the oil,) brown/sear top and bottom and sides of steak to seal juices in, visually watch for sear marks. It only takes about 15 to 30 seconds per area. If you don't sear all areas the juices will flow out and it will be dry. After searing place in oven, bake not broil around 300 degrees, with a little worcestershire sauce, butter salt, pepper (fresh rosemary and garlic if you prefer also)on top and take out when it about 125 to 130 degrees. When you take it out it will continue to cook for a while due to the heat that is still in it and will wind up about 135. Let it rest about 5 minutes until it is served to allow juices to stay in the meat when it is cut.

Olive oil is great, a bottle sits with S&P beside my cook top. BUT, in a pan broiling environment such as steak, it won't stand up to the heat. Peanut oil, dry skillet, or (you knew this was coming) a tiny bit of lard will do it better without the burnt oil taste and smell.

Save the Olive oil for sauteing onions and chilies, where the taste wakes everything up.
