My personal favorite way is over a bed of mesquite or pecan coals but I also like to cook them in a hot cast iron skillet with olive oil. Hard to beat it!

I prefer them very thick cut, like 2" plus ... salt, pepper (lots), onion & garlic powder let marinade overnight to soak in ... toss in 110-120 degree smoker rolling live oak & pecan for a half hour or so, then toss down over very hot coals for 1-2 minutes per side ... put a pat of garlic butter on top and let rest for 4-5 minutes ... perfect medium rare smoked to perfection!

Kosher salt and course pepper, allow to come to room temp a bit, sear on bed of mesquite coals as hot as I can get it just long enough to put a crust on it and still be very rare.

I rub with a local mixture, smoke till an internal temp 120. Then sear for 90 seconds both sides. I love my egg

Red hot mesquite charcoal with a couple of chunks of pecan right before they got on. Coat in EVOO, seasoning salt and coarse ground black pepper. Hot and fast for 4 flips and food

Over Mesquite wood and cooked until it is hot, pink and juicy in the middle up
I also would rather have my steak undercooked versus overcooked.

Yep, and I'm fine with anything from just above rare to right below medium.

Guess I'm backwards. I like a thick filet, ribeye, whatever. Sear on both sides, then set off to the side of the coals and let it roast up to medium rare to medium. Garlic salt and pepper only usually.

Always charcoal! Oak or mesquite mixed in. Flip once. Sear both sides till medium rare.

little worstershishire and Montreal Steak seasoning

bring to room temp

CHARCOAL.....HOT.....2-3 min per side, med rare to rare for me

grandma always made an excellent sirloin in a cast iron skillet with butter and lemon. probably one of my most memorable steaks. we could roll in at 3am and she would cook us a big steak and mix us a drink. miss the shlt out of my HONEY!!!!!!!!!!!!!!!!
