Tenderized steaks for jerky? - 07/14/17 01:38 PM
I have some tenderized ham steaks leftover, anyone ever smoke or dry them for jerky (venison)?

Never done it but I can't see why it wouldn't work. I'll bet it comes out good.

I've never used tenderized meat but have used both ham steaks and backstrap (cut 1/4" thick). Marinated a few days and dehydrated and it was fantastic jerky.

I didn't see this earlier, but I've made jerky from tenderized round steak. Worked pretty well. I still pounded the steaks to get them thinner, since they were close to 1/2" thick. I smoked at 180-degrees with pecan. I was happy with the result.
