1) coat in flour
2) dip in beaten egg
3) coat in 1:1 breadcrumbs and Parmesan
Put in non stick skillet with a couple tablesooons of olive oil and 1 tablespoon of butter
Gravy -- reduce heat and deglaze skillet with a 1/2 cup broth (beef or chicken). Add some butter and flour. Stirring constantly. Add cream. Season to taste with garlic salt and a bunch of pepper.
Ok, I was thinking that maybe it could be a white wine sauce since you went the parmesan route on the meat.
