I put up 8 pints of salsa this morning. I added a little twist. I used my regular recipe of tomatoes, onions, jalapeņos, and tomato paste. I reserved half of my chopped jalapeņos to put in there, along with two jars of chopped dehydrated onions, after the cooking was over. The minced onions seemed to add a little thickness. I'm hoping that the acid in the tomatoes and the vinegar will pickle the jalapeņos.

With all due respect to my elder, your missing at least one or two very vital ingredients.
Cilantro(no stems just leaves finely chopped) and some lime juice.

I use cilantro fresh from my garden when I serve it. Cilantro loses it's taste when canned. Vinegar instead of lime juice helps preserve the canned salsa.

I opened my first jar last night for my stir fry. I dipped in a chip. It came out just the way I wanted it. I gave a pint to a pepper bellied neighbor. He asked for the recipe.
