Chipotle Carnitas

My favorite way to cook little pigs is to make carnitas in a crock pot. Here's a 2.5 lb bone in ham. I use small hams or shoulders.



Season er up and cover meat with chicken broth. Cook on low for 6-8 hrs.



Do fun stuff while the crock pot works it's magic.



Whip up some fresh hot salsa verde, (love this stuff).

When it's done do you spread it on a pan then put it under the broiler for a few minutes to give that supple meat a nice little chur?

When the meat is done remove it and most of the liquid. Shred with two forks, return to pot and add chopped chipotle peppers in adobo sauce, fajita seasoning, and cumin to taste.

Make some frijoles and whip up some fresh tortillas.







Add some onion, cilantro, lime, avacado, jalapeno and you're all set.






Go kill more pigs and repeat.

Yes Sir it's shredded pork.

No I don't do the traditional carnita crisp up on small feral pigs because it's so lean, it dries out. I keep it juicy and delicious!

Yes Sir, super simple.

Get a pot of water boiling,
To the water add a half an onion, 4-5 cloves of garlic, couple jalapenos and a couple serranos. I add at least 3 of each because I like mine hot.
After all that gets soft, add one lb of tomatillos and boil until they start to turn brown. Remove from heat, don't over cook your tomatillos you don't want them to bust.
Add all that (no water) to a blender. Add cilantro and salt to taste. Done.

perfect! my wife does the carnitas in a pressure cooker. so dang tender.

Those are some very fine looking tacos food Thanks for the salsa verde too. Going to have to try that out soon.

Thanks ya'll, I love tacos. That green sauce is addictive once you find out how much of what you like. A little lime juice is good in there too but didn't do it this time. up

OH! and if you like grilled fish (or pan seared - I do) it's darn good. Just smear on when fish is about done.

roflmao Thanks guys. I try to eat one big meal a day. I snack when I'm not eating though on healthy stuff. hammer Jerky, pistachios, beer etc.....when I do get hungry I hurt myself. I'm 5'11" and never been over 235 so no I'm not obese roflmao I do need to get back to 200....but the TACOS! grin

Thanks again yall. No secrets really. Just flour/baking powder/salt/shortening/hot water. Mix, knead, rest, roll out and cook...for the flour torts. Corn torts just mix corn flour with water, I use a tortilla press for those. Lots of videos on Youtube. I've been playing around with different recipes lately. I saw one that uses a little bacon grease in the dough. Sounds good/looked good but I'm watching my blood pressure so passed on trying that. bang
