Had some things to take care of this weekend and couldn't get to the lease. So I'm smokin some deer and pig backstrap. I got a buddy that puts mustard on them so I thought I would try it. This is a before pic and I will have an after pic later.

I used a propane smoker with apple wood chips. Like a dummy I forgot to take after pics. I didn't get as good bark as I would have liked. I wondering if I put to much mustard on them.

When I've used mustard I usually get a good bark. Bad part is there is a fine line between not enough and to much.
