they use so much potatoes in mexican recipes (as a filler mostly). it gets real old real quick.

Man I love taters, especially the gold potatoes. I will destroy some papas con chorizo. grin

The little dutch butter potatoes are everything, they are expensive but worth the splurge every once in awhile.

Looks amazing! Are those Mexican flapjacks the real deal or Mission specials? That would be my only critique to that platter.

I ask because we found a tortilla lady near the HEB in AP that makes the BEST corn tortillas. We asked her about corn tortillas the first time we went in there and said how most just crumble and fall apart. That sweet little old abuela apparently took offense to the question and looked right at/through my aunt and flatly said, "My tortilla no fall apart."

roflmao Those are just some HEB brand yellow corn tortillas. They don't break/crumble if you toast them. I've been making homemade flour tortillas for a long time but I just starting making corn. I made some the other day by hand to go with my carne guisada but they didn't turn out right. I'm getting a tortilla press now for the corn and will be good to go. up
