I just got my slow and sear in the mail and quickly put on some ribs to try it out. I can say I was very surprised at well they turned out for it being my first time smoking ribs.

Been Queing ribs on a weber for 30 years and love it...a new technique that I'm now using...smoke for 1 hour and then coat with apple sause and wrap in foil for the remainder time...seems to take the" smoke bite" out of the taste...I also remove the bark from the wood that also gives
a "bitter" taste......I think weber created something that they had no idea how good it really is.
whenever I start thinking about buying a big ol smoker, I cook some ribs and save myself a couple grand
