Nilgai T-Bones

About all I eat anymore is Nilgai but this is the first time I've had our guys cut me some T-Bones. Pretty excited about it. Should be incredible as long as I keep it on the rare side. That meat is so lean, just easy to overcook.

Looks great but I could see how it could be over cooked easily with no marbling in the meat. Much better for you though.

Nilgai is aawesome meat. Fine grained. I would like to know how those T-Bones turned out. Makes my mouth water.

Actually turned out to be one of the better steaks I've ever had. 4 minutes on each side and melted a little butter over them in the end. Cooked just on the rare side of medium rare. My 6 year old said "oh yeah, I'll have a whole plate of that." Definitely will get these cut every time from now on.

Sorry, should have taken a pic of the finished product. I have a few more packages of them cut like this so I'll do it again very soon. I also got them to cut me some bone in prime rib that I can't wait to try. Looks like rack of lamb except it's Nilgai. Should be awesome!

I catered an event a couple of months ago and they brought me 20lbs of Nilgai sausage to smoke and serve as well. It was procedd by Cinnamon Creek, and might be the best sausage I've ever eaten.
