Rabbit and Dove Sauce Piquaunt!

Two fat cottontails and a limit of birds.

De-boned, cut into bite sized pieces, and seasoned with SPG.

1/2 lb of thick cut hickory smoked bacon that I ran through my smokehouse.

Bacon in the Dutch Oven, cook, remove.

1 chopped yellow onion with a stick of Falfurrias Sweet Cream Butter, cook onions down good until they start getting dark. Lots of flavor there, but don't burn.

When onions are ready add chopped celery, red bell pepper, fresh jalapeno, and chipotle peppers. Stir, and cook until veggies sweat and start to get soft. Remove.

Now make a blonde roux.

When roux is ready, add veggies back. Stir.

Meat is browning in a skillet with some olive oil during the process, don't take long.

When meat is browned, add to pot & stir in with the roux & trinity.

Now add Original Rotel, garlic, crushed tomatoes, tomato sauce, bacon, and chicken broth. Stir. Cover and let simmer for a couple of hours. Spoon off excess oil. When about ready, will add Worchestershire, parsley, and season to taste. Will let cool down and put in fridge. Tomorrow, will make some rice to spoon this over and get after it.


That there be a sauce piquant. Gonna be good.

Normally I cook in some tomato paste, during the thickening up process but didn't have any this time. Oh well.
