Forgot to take pic of my plate. Green beans cooked in a gallon of bacon grease with some fajita seasoning and some left over mashed potatoes I fried into cakes. Night night

Wife said that was the best steak I have ever cooked. I usually like a subtle hint of mesquite, but the leftover pecan from my turkey smoke was pleasant. I think I'm getting the hang of it. I have two whole ribeyes (33lbs) aging in the fridge that will be slightly aged, trimmed at 16-20 ozs pieces and given as Christmas gifts to our closest friends. I also give them some of my own seasoning which is mostly salt and pepper, but a pinch of cayenne and garlic powder. These steaks stand on their on, but I like that medium well bark and an almost rare center.
The bone will go in some beans tomorrow!

I didn't add and egg, just some grated cheese and bacon. I didn't feel like peeling taters and couldn't wait on a baked one, so I improvised. Crisp on the outside and mashed on the inside.
