to share your chorizo recipe?
Ha ha, sure. I use all feral pork, I will mix 80/20 pork/bacon ends & pieces if the pork is too lean. Most of the pigs taken out of the farm country are really fat so don't need to add any. The secret weapon is the "La India" chorizo seasoning. It's the best I've ever tried, I just follow the directions on the container. Most people that I know like their chorizo with more fat in it. I like to make mine with JUST enough fat to keep it from drying out while cooking, I don't like all that extra grease. Give it a shot, I bet you'll like it.
