What's your favorite?

I'll have a crowd to feed tomorrow and I'm looking to wow them.

First take some kitchen scissors and cut the wing joints off of the breasts so all the meat will come off of the breast bone easily.
Season with your favorite dry spices.(salt,pepper, garlic,whatever you like) then sprinkle each breast with Green Tabasco.
Cut bacon strips,(the cheapest, thinnest works best) into thirds, and wrap each breast with 1/3 strip of bacon and stick a toothpick through to hold it in place. Sprinkle a little coarse black pepper on the bacon for looks.
Have a smoker going and smoke them for about 20-30 minutes for good flavor and color, then transfer them to a hot grill that you oil the grates right before putting the breasts on. Cook on med. high heat until the bacon is crisped.
It really doesn't take long and if everybody is hanging out and you have help and cold beer it's a good time. Give it a try !

dove recipes seem to fall into just 2 general categories
1) wrap in bacon along with something else (jalapeņo, cheese or mushroom) & grill or broil
2) smother with cream of something soup (chicken, celery or mushroom) and bake

Here is an option:
soak dove breast overnight in marinade (buttermilk, salted milk or soy sauce & whiskey or the old standby- salad dressing)
remove bone, pat dry, roll in flour, dip in marinade, dip in flour- let rest a few minutes
pan fry some eggs in butter, olive oil or bacon fat
pan fry the breaded dove breasts until brown on both sides (3-4 minutes)
stack fried egg and fried dove on biscuit then pour on some cream gravy if you like- hot salsa is good too

cooking dove stew and dumplings on this farm for many yrs...
I'm 3rd or 4th gen to do it...

I'm here to tell you that WPNHNTR's recipe is ridiculously good!

My wife just won't eat wild game. Period. She LOVED these! Everyone tried them, even the kids loved them!

Start a 1/4 lb or so of bacon frying in a skillet. When it's half done, throw in chopped onion, thin sliced jalapeņo, garlic, and dove breast. A little coarse black pepper, salt, and cook it until the bacon is done. You can eat it over rice or in a tortilla.

Glad you liked it. That's been my experience also. People who won't normally eat dove or wild game will eat these.

For a crowd.. wraps or fried nuggets are hard to beat. For the family.. hard to beat hot fried dove. I've done it with duck and backstrap as well.

Got the recipe oh here last year.. I'll try to find it. This is how mine came out:

seen a recp. on a diff. site yrs ago...
doves were mixed w/cornbread stuffing and baked..
the can of cream of whatever would probably make a moister casserole...
been beening to try it.

One of our favorites is to filet the dove breast out.
Marinate in teriyaki sauce overnight.
Take out of marinade, and place a piece of pineapple on both sides of dove.
Then wrap tight in piece of bacon and skewer.
Season with salt and pepper and grill till bacon is cooked.
Good stuff.

Have also marinated filets in fajita marinade.
Cook with peppers and onions.
Make fajitas with guacamole,sour cream,cheese, and Pico de gallo.
Good stuff also.
